Amazin' Chili Recipe

Makes 9-10 quarts

1 pound beef "pet food"

3 pounds grass-fed ground beef

1/4 cup lard

2 cups dry black beans, soaked overnight and cooked 12 hours with garlic until soft

1 cup red wine (optional)

1 quart beef stock

1 quart pork pudding

1 large can chopped tomatoes

1 can tomato paste

4-6 ears corn, cut off cob

1 onion, chopped

1 red or green pepper, seeded and chopped

4-6 tablespoons ground New Mexico Chile (not chili powder) www.loschileros.com

2 tablespoons dried oregano

2 tablespoons ground cumin

2 tablespoons maple sugar

salt to taste

3-4 gloves garlic, crushed

Brown meat in lard, add optional red wine and boil down. Add remaining ingredients, reserving juice from the black beans. (Use this to thin the chili, if necessary). Serve with choice of grated cheese, avocados, chopped green onions, chopped cilantro, tortilla strips fried in lard. Freezes well.
